Chocolate chip banana bread - MY NEW FAVORITE YUMMY!

This has become my new favorite delicious morsel to make for Christmas! Did someone say "a yummy, scrumptious morsel made out of chocolate and banana?" Let me just tell you: IT IS SO DELICIOUS. I made it on a whim last night - it was the best decision I've ever made. (Well, almost... Marrying Derek was probably the best decision I ever made). So now as I snack on what seems like my millionth piece, I'll share with you my recipe so that you may also enjoy this, truly, delicious treat.



Look at this amazing beauty... YUM.

Ingredients:
  • 1/4 cup vegetable oil
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs, lightly beaten
  • 3 bananas, mashed (1 cup mashed banana)
  • 1 cup chocolate chips (I used a bag of Scharffen Berger semi-sweet baking chunks instead, to keep the sweetness-overload to a minimum)


  • Cooking directions:
  • Pre-heat the oven to 350°F
    Grease a 8 1/2-inch x 4 1/2-inch loaf pan.
    In a large bowl, whisk together the flour, salt, sugar, baking soda and salt. Then mix in the oil, bananas and eggs. Stir in the chocolate chips (be sure to chop them up into smaller pieces so as not to overwhelm the banana flavor!) Be sure not to overmix, and then pour them into the prepared pan. Bake for about 70-80 minutes (I went with 75 minutes... I was channeling Switzerland and staying neutral). 
    Cool the loaf in the pan for 10 minutes, then turn out and cool completely, right side up.
    COOL AND THEN ENJOY!
